Does anyone have a good spinach recipe?

I have a bag of fresh spinach that I am not going to eat in time. I need to cook it and freeze it somehow. Since the wheather has warmed up, I lost my taste for fresh spin. I love Trader Joes and will go back to buy something that will go with it.

    Try to saute it in some butter and freshly chopped garlic. sprinkle with parmesan cheese for extra taste. YUMMMMM!

    I love to steam the leaves a little, then puree it with ricotta, a little basil and oregano, a little parmesan, and stuff it into oven-ready cannelloni tubes. Pop them into the baking pan, pour sauce over it all, then shredded mozzarella, romano or provolone, and pop it into the oven. Mmmm.

    i love making italian wedding soup. use chicken broth, frozen small meatballs, green onions chopped (i add carrots too), and little pasta like accini di pepe and a bag of spinach. just boil it all together, then simmer. you can add salt, pepper, garlic salt/powder if you want to. its delishous and so easy. enjoy!

    I have a good friend who always makes these for parties.

    Spinach Balls

    2 pkg frozen chopped spinach ( you would have to guestimate )
    4 beaten eggs
    1 small minced onion
    1/2 c softened margarine
    1/2 c parmesan cheese
    1/2 teaspoon garlic salt
    1/2 tsp thyme
    2 C. pepperidge farms stuffing mix bread crumbs

    Cook spinach according to directions. ( in this case, its your own , of course ) Drain and squeeze all water from spinach. Mix all ingredients together and chill. Roll into small balls. Put on lightly greased cookie sheet and bake at 350 degrees for 10-15 minutes. Serve warm or at room temp. These can be baked ahead of time and frozen. Just reheat when ready to serve.

    Saute garlic and ginger add spinach, soy sauce and a little water and steam until done….

    You’re not going to get a whole lot of cooked product out of a bag of spinach.
    Personally I would :
    gently sweat some garlic in olive oil
    sweat some walnut pieces
    add the spinach ,
    cook until done but still vibrantly green
    Coarse chop
    toss into a clean towel and squeeze out the moisture
    toss into a bowl
    add about 1C of whole milk ricotta
    a wee bit of fresh grated nutmeg
    S&P TT
    Mix Thoroughly
    Keep as a filling for things like chicken breasts or hand made ravioli
    Freeze

    olive oil, spinach, mushrooms, garlic, salt, pepper & tomato sauce!! :)
    Freezes really well: My roomie makes this ALL the time and freezes the left overs: I never knew you could, but apparently so! haha!

    Saute Shrimp in Olive oil with fresh garlic. Once your shrimp is nice and pink add your fresh spinach. It will cook fast. Once it’s done add fresh Parmesan cheese.
