Vegetable Risotto
Serves 4
INGREDIENTS
30ml (2tbsp) Somerfield Olive Oil
700ml (1 1/4 pints) hot vegetable stock
1 onion, finely chopped
225g (8oz) sweetcorn
1 clove garlic, crushed
25g (1oz) freshly grated Parmesan cheese
175g (6oz) button mushrooms, sliced
15ml (1tbsp) fresh parsley
1 medium courgette, sliced
Salt and freshly ground black pepper
1 stick celery, sliced
Extra Parmesan for topping
1 medium yellow pepper, cored, de-seeded & sliced
Crusty French bread for serving
225g (8oz) Risotto Rice
METHOD
1. Heat the oil in a large heavy-based pan, add the onion, and garlic, fry until soft.
2. Stir in the mushrooms, courgette, celery, pepper and rice. Cook for 3-4 minutes.
3. Pour in a quarter of the stock and simmer until the stock is absorbed.
4. Gradually stir in the remaining stock in stages, allowing the liquid to be absorbed before adding more. This will take about 25 minutes.
5. Stir in the sweetcorn, cheese and parsley. Season to taste, top with flakes of Parmesan and garnish with parsley. Serve immediately with crusty French bread

In this video, Betty demonstrates how to make Bundt-Style Banana Bread. It is a luscious treat that is baked in a Bundt cake pan. This recipe came from my good friend, Lynn, who has wonderful, tasty, and gorgeous recipes! Ingredients: 3 ripe bananas, mashed ½ cup vegetable oil 2 eggs, well-beaten Splash of vanilla 2 cups sugar (I reduced this to 1 ½ cups.) 2 cups self-rising flour 1 cup chopped nuts, optional (I omitted the nuts.) cooking oil spray In a large mixing bowl, combine 3 mashed ripe bananas, ½ cup vegetable oil, 2 well-beaten eggs, and a splash of vanilla. Add 1 ½ to 2 cups of sugar, 2 cups of self-rising flour, and 1 cup chopped nuts, if desired. Use a strong spoon, and mix all together really well. Pour into a Bundt pan that has been sprayed with cooking oil spray. Bake at 350 degrees to 45 minutes to 1 hour. This Bundt-Style Banana Bread has a really crispy and delicious crust. This makes a terrific afternoon treat with coffee or will make a quick breakfast when you’re on the go. It is a great snack anytime! Thanks for another great recipe, Lynn! –Betty

@laurysocheerful The ideal pan is a Bundt cake pan (The shape and size I used). Next is a tube pan, which is used for angel cakes a lot. If all you have is a rectangular baking pan, that will work. Don’t fill any type of pan too full.

I just made this and it’s in the oven. The batter was quite thick. It wasn’t runny at all. I’m assuming this is normal, yes? Shame I couldn’t see how your batter looked like. I once made banana bread before and it turned out too mushy. :/ I hope this is okay.

I use a blender to “mash” my bananas because otherwise I tend to end up with little chunks in my bread. Never thought of using a bundt pan! I love that!

My grandma made banana bread alot, and she said that using the bananas that are softer, is better, because a riper fruit is sweeter and brings out the natural sugars. I have also used bananas, and a small amount of extract for flavor as well. God bless you!
