How do you make a great spinach QUICHE?

I’ve always enjoyed quiches, especially spinach and cheese quiche but it doesn’t seem as if many restaurants offer them anymore. Can you provide me with a simple recipe so that I can make it at home?

    Start with a great shortcrust pastry. Delia Smith’s shortcrust instructions are extremely thorough about what to do, and what NOT to do!

    As for the filling, I have never made a spinach quiche, but I would say good quality eggs, the right amount of salt, and some freshly grated nutmeg (or other spice that goes well with eggs and spinach) would be a good start.

    I don’t have a recipe for you, but Panera bread has a killer Spinach , Artichoke, egg and cheese soufle (sp?). I know not the same as a quiche, but it is very yummy! You have to get there really early in the morning to get any though (I have gotten there before at 7:15am and none were left).

    Celebrate Canada’s French heritage with this crust-less quiche loaded with the intense flavour of five cheeses. Packed with spinach, it’ll really satisfy.

    Ingredients:

    1 spray cooking spray, (5 one-second sprays per serving)
    1 cup onion(s), yellow, sliced
    10 oz chopped frozen spinach, thawed and well-drained
    1 cup fat-free ricotta cheese
    3/4 cup Kraft (U.S.) Free Shredded Cheddar Cheese, or other brand
    2 slice Borden (U.S.) Fat Free Singles American Cheese, or other brand, torn
    3 large egg(s), lightly beaten
    1 tsp Dijon mustard
    1 tsp dried oregano
    ½ tsp table salt
    1/4 tsp black pepper
    1/4 cup fat-free bleu cheese dressing
    1/4 cup Galaxy Foods Soy Cheese Veggie Topping

    Preheat oven to 375ºF. Coat a 9-inch nonstick pie pan with cooking spray.

    Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add onion and sauté until soft and golden, about 5 minutes.

    Transfer onions to a large bowl and add spinach, ricotta, cheddar cheese, American cheese, salad dressing, eggs, mustard, oregano, salt and black pepper. Mix until well blended. Spoon mixture into prepared pan and smooth top with back of a spoon. Sprinkle with grated topping.

    Ingredients
    Amount Ingredient Preparation
    4 ounces spinach fresh, rinsed well
    1 cup swiss cheese shredded
    1/2 cup monterey jack cheese shredded
    1/2 cup cottage cheese
    1 1/4 teaspoons onion dried, minced
    1 tablespoon olive oil
    1/2 teaspoon basil
    1/2 teaspoon savory
    1/2 teaspoon black pepper
    1/4 teaspoon garlic salt
    4 large eggs
    1/2 cup milk, skim, evaporated
    1 each pie shell (9 inch)

    Directions
    Blend cheeses, onion, oil and seasonings until smooth.

    Add eggs, milk, and spinach.

    Pour into prebaked (according to directions on box) pie crust
    shell.

    Bake at 375 degrees for 35 to 40 minutes.

    Cool for 10 to 15 minutes.

    Serves 6 slices .
