What vegetable goes well with pesto?
I’m cooking dinner for my boyfriend for the first time, and as I’m making pesto and chicken, I realized that I don’t have a vegetable to go with. He’s kind of a health person, and I know he likes to eat veggies with his food, and I’m drawing a blank as to what would go well.

I think any of the green veggies go with pesto. I’d suggest either green beans or asparagus, but broccoli would be good as well. And then a nice tossed salad as well or cucumbers in sour cream.

I like to saute red and yellow bell peppers in just a tiny bit of basil olive oil. That way the basil kind of ties it all together…

Although Tomatoes arent a “vegetable”, they go great with pesto. Asparagus seems nice too, maybe grill some, season with salt/pepper, it will do pretty nicely.

Pesto Potato Salad
Pesto is a great a pick-up for potato salad
2 pounds new potatoes, scrubbed
2 tomatoes, cored and diced
1/2 cup red onions, minced
1 cup celery, finely chopped
1/2 cup light mayonnaise
1/2 cup unflavored non-fat yogurt
Pesto (Ingredients below)
Method
Steam whole unpeeled potatoes until soft when pierced with a fork, about 30 to 40 minutes. Let cool to room temperature and cut into bite-sized cubes. Place in a large bowl and toss gently with tomatoes, onions and celery.
Dressing: In a small bowl, combine mayonnaise, yogurt and 1/4 cup pesto. Pour dressing over potato mixture and toss gently, gently to combine. Refrigerate for half an hour to one hour to chill.
Pesto:
1/4 cup nuts of your choice
3 garlic cloves
2 cups packed fresh basil leaves
1/4 cup chopped fresh parsley
2/3 cup olive oil
Put all pesto ingredients except for oil, into a food processor. Process until finely ground. With motor running, gradually add oil until pesto is the consistency of mayonnaise but has some texture to it. Do not puree. Add freshly ground pepper to taste if you like a spicy flavor. Transfer to a small jar and pour a thin film of olive oil over surface of pesto. Cover tightly and store in refrigerator if not using immediately.

wow, your boyfriend is sure in for a treat just from you making the Pesto and chicken! There are many vegetables that go well with this paring but lets take it to the next level and think of flavor and color together. The first one that comes to mind is tomatoes,(grilled, roasted, sauteed, raw, baked or broiled) red peppers or yellow peppers, (baked or preferably, roasted) Sauteed Red Onions, Yellow Squash, Spinach, Water Chestnuts, , Portabello Mushrooms or really, any mushrooms, Radicchio, Broccolini, Sun Dried Tomatoes, Procuitto, Spinach and Smoked Mozzarello Cheese………..hopefully these ideas give a spark to your own imagination or give you a starting point of making your boyfriend happy for this first time until you try out some other dishes!
