What vegetable tastes worse cooked versus raw, and raw versus cooked…in your opinion of course?

    One that tastes worse cooked is any lettuce, such as romaine, it’s awful cooked.

    And worse raw I would definitely have to say a potato or a watermelon radish.

    Better cooked—lot’s of things, but slimy okra comes to mind.

    Broccoli is so nasty raw ….but once you steam it or cook it is delicious.
    Carrots are so nasty cooked… but raw with a bit of lemon mm so fresh and delicious,,

    green beans
    rhubarb
    onion
    leek
    broccoli flower
    cauliflower
    mature spinach
    eggplant/brinjal/aubergine

    parsnip
    garlic
    Brussels sprouts

    Better raw:
    lettuce
    celery
    spring onion/shallot
    broccoli stem
    young spinach
    cucumber

    Like them equally both ways:
    carrot
    swede/rutabaga
    kohlrabi
    cabbage
    chilli
    capsicum/bell pepper
    tomato
    zucchini/courgette

    EDIT: The drumstick is the really long, stiff fruit or pod of the tree Moringa oleifera, native to India.

    The leaves of the tree are also used in cooking. They’re quite tasty, but they tend to go through you fairly intact, like corn.
